A little late, but here's what we are eating this time around
Friday: Chicken Cachetori with whole wheat linguine
Saturday: out
Sunday: BBQ brisket, potato salad, fruit salad (entertaining)
Monday: One Pot Lemon-broccoli-Parmesan Pasta
Tuesday: Shepherd's Pie (a hubby request)
Wednesday: Kung Pao Chicken with snow peas
Thursday: Rice and Bean burritos
Friday: other plans
Saturday: fish tacos, leftover rice/beans
Sunday: Chicken salad sandwiches, BBQ chips, fruit

Let me know if any recipe request....I'm trying a few new ones this week :)

what do you put on your fish tacos? i LOVE (and miss) the ones from berryhill!

sorry...never found this one!

I use tilapia; sprinkle it with salt/pepper/lime juice/cayenne pepper and have J grill it.
Then I make a sort of "coleslaw" out off broccoli slaw mixed with sour cream, lime juice, pepper.
I put a bit of each in a warmed corn tortilla and top with a touch of salsa. mmmmmmm.
I also do a fruit salsa instead of the slaw sometimes....my favorite is mango, purple onion and chopped avocado.
